  • 4 pieces boneless, skinless chicken breasts Opt for fresh chicken for best flavor.
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1/2 cup sun-dried tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning Adjust to taste.
  • Salt and black pepper to taste
  • Fresh basil for garnish (optional)

Preparation

  • Grease your crockpot with a bit of cooking spray.
  • Place the boneless, skinless chicken breasts at the bottom of the crockpot in a single layer.
  • In a mixing bowl, combine the heavy cream, chicken broth, chopped sun-dried tomatoes, minced garlic, Italian seasoning, salt, and black pepper. Stir until well combined.
  • Pour the creamy mixture over the chicken in the crockpot.

Cooking

  • Cover and set your crockpot to low for about 6 hours or high for 3 hours.

Serving

  • Once the chicken is tender and fully cooked, gently shred it with a fork to soak up the sauce. Serve hot, garnished with fresh basil if desired.

Notes

Serve with rice, mashed potatoes, or crusty bread. Pair with a glass of white wine or sparkling water for an enhanced experience. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months.
