  • 1 pound boneless, skinless chicken breasts
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 1 cup plain yogurt
  • 1 medium cucumber, grated
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh dill (or 1 teaspoon dried)
  • 1 tablespoon lemon juice

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large baking dish, combine the rice and chicken broth. Spread the rice evenly across the bottom.
  • Season the chicken breasts with salt and pepper, then lay them on top of the rice in the dish.
  • In a bowl, mix together the yogurt, grated cucumber, minced garlic, olive oil, dill, lemon juice, and a pinch of salt. Mix until well combined.
  • Spoon the tzatziki mixture over the chicken breasts.

Cooking

  • Cover the dish with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the chicken is cooked through and the rice is tender.

Serving

  • Let it cool for a few moments before serving. Garnish with sliced tomatoes and lettuce, if desired.

Notes

For variations, use dried dill or experiment with other herbs like mint or parsley. Store leftovers in an airtight container in the fridge for up to three days. Reheat in the oven to maintain moisture.
