Ingredients
  

For the Cheese Mixture

  • 2 cups cottage cheese, blended until smooth
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 1 tablespoon vanilla extract

For Layering

  • 1 cup strong brewed coffee, cooled
  • 1 tablespoon cocoa powder (for dusting)
  • 12 pieces ladyfinger cookies

Preparation

  • In a mixing bowl, blend the cottage cheese until it’s creamy and smooth. Add the heavy cream, powdered sugar, and vanilla extract. Beat until the mixture is light and fluffy.
  • In a separate bowl, pour your cooled coffee for dipping.
  • Take each ladyfinger and dip it quickly into the coffee, being careful not to soak them. Lay the dipped ladyfingers in a single layer on the bottom of your preferred dish.
  • Spread half of the cottage cheese mixture over the layer of ladyfingers, smoothing it out evenly.
  • Repeat the process by adding another layer of dipped ladyfingers, then top with the remaining cottage cheese mixture.
  • Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight to allow the flavors to meld together.
  • Just before serving, dust the top with cocoa powder using a fine sieve.

Notes

This dessert can be served with fresh fruit, espresso, or herbal tea for a balanced meal. It can be stored in the refrigerator for 3 days or frozen for up to a month.
