Ingredients
  

  • 2 cups frozen pineapple chunks about 1/2 a fresh pineapple
  • 1/2 cup full-fat coconut milk canned, chilled overnight
  • 2 –3 tbsp honey or agave adjust to taste

Instructions
 

  • Add frozen pineapple, coconut milk, and honey to a high-powered blender. Blend until smooth and creamy, stopping to scrape the sides as needed. If the mixture is too thick, add 1–2 tsp of coconut milk. Scoop into bowls or swirl into cones using a piping bag for that classic “soft-serve” look. Top with fresh pineapple and serve immediately!
