  • 2 cups shredded cooked chicken Or use rotisserie chicken for convenience.
  • 1/2 cup dill pickles, chopped The star of the show!
  • 1/4 cup mayonnaise Adjust for creaminess.
  • 1/4 cup Greek yogurt For a healthier twist.
  • 1/4 cup diced celery For added crunch.
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • Fresh dill for garnish Optional.

Preparation

  • If not using rotisserie chicken, cook your chicken by boiling or baking it until fully cooked. Once cooled, shred it into bite-sized pieces.
  • Finely chop the dill pickles and celery to ensure a nice crunch in every bite.
  • In a large mixing bowl, combine the shredded chicken, chopped pickles, diced celery, mayonnaise, Greek yogurt, and Dijon mustard. Mix everything together until it’s well coated.
  • Add salt and pepper to taste. Feel free to adjust the amount based on your preference!
  • Garnish with fresh dill if desired, mix one last time, and then serve either on a bed of lettuce, in a sandwich, or with crackers.
  • If you have time, allow the chicken salad to chill in the refrigerator for about 30 minutes to let the flavors meld together.
