Ingredients
  

Vegetables

  • 1 medium head cabbage, chopped
  • 1 large onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, diced
  • 1 large green bell pepper, chopped
  • 4 cloves garlic, minced

Base Ingredients

  • 6 cups vegetable broth
  • 1 can diced tomatoes (with juice)

Seasoning

  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Garnish

  • Fresh parsley or cilantro (optional) For garnish

Preparation

  • Chop the cabbage into bite-sized pieces. Dice the onion, slice the carrots, chop the celery, and bell pepper, and mince the garlic.

Cooking

  • In a large pot, heat a splash of oil over medium heat.
  • Add the diced onion and sauté until translucent—around 3-4 minutes. Then toss in the minced garlic, stirring for another minute until fragrant.
  • Add the carrots, celery, and bell pepper. Cook for about 5 minutes until they start to soften.
  • Pour in the vegetable broth and diced tomatoes, stirring well. Add the chopped cabbage, dried thyme, and season with salt and pepper.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes, or until the cabbage is tender.
  • Once done, taste the soup and adjust seasonings as necessary. Ladle hot soup into bowls and garnish with fresh parsley or cilantro if desired.

Notes

For optimal storage, transfer the soup to an airtight container, allowing it to cool completely before sealing. It keeps well in the fridge for about 5 days and can be frozen for up to 3 months.
