  • 1 cup breadcrumbs (preferably seasoned) For a flavorful crust.

  • 1 cup heavy cream For the creamy sauce.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Place each chicken breast between two pieces of plastic wrap and gently pound them to about 1/2 inch thickness using a meat mallet or rolling pin.
  • Lay a slice of cheese on each flattened chicken breast and fold them in half, securing the cheese inside.
  • Set up a breading station with three plates: one for the flour, one for the beaten eggs, and one for breadcrumbs mixed with garlic powder, onion powder, salt, and pepper. Dredge each chicken piece first in flour, dip into the beaten eggs, and finally coat with breadcrumbs.

Cooking

  • In a large skillet, heat olive oil over medium-high heat. Sear each chicken breast until golden, about 3-4 minutes on each side. Transfer the chicken to a baking dish when done.
  • In the same skillet, lower the heat and add the heavy cream. Stir until slightly thickened, seasoning with salt and pepper. Pour the creamy sauce over the chicken.
  • Place the baking dish in the oven and bake for 20-25 minutes until the chicken is cooked through and the cheese is melted.
