  • 1 pound ground halal beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, diced
  • 2 stalks celery, diced
  • 4 cups beef broth
  • 1 can diced tomatoes, undrained (14.5 ounces)
  • 1 cup green beans, cut into 1-inch pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Fresh parsley or green onions for garnish (optional)

Preparation

  • In a large pot over medium heat, add a tablespoon of olive oil and let it warm.
  • Once hot, add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
  • Add the ground halal beef to the pot. Break it apart with a wooden spoon and cook until it’s browned, about 5-7 minutes.
  • Toss in the diced carrots and celery, sauté for another 5 minutes to soften the vegetables slightly.
  • Pour in the beef broth and diced tomatoes (including the juice), stirring to combine all ingredients.
  • Add the green beans, dried basil, and oregano. Season with salt and pepper to taste.
  • Bring the soup to a gentle boil, then reduce heat and let it simmer for about 20 minutes.
  • Taste and adjust seasoning as needed. Ladle into bowls and garnish with fresh parsley or green onions if desired.

Notes

This soup can be stored in an airtight container for up to 3-4 days in the refrigerator or frozen for up to 3 months. Reheat gently over medium heat when ready to enjoy.
