  • 1 cup long-grain white rice rinsed
  • 2 cups vegetable broth for added flavor
  • 2 tablespoons unsalted butter can be substituted with ghee for a Halal-friendly option
  • 2 medium onions thinly sliced
  • 1 teaspoon garlic powder
  • to taste Salt and pepper

Garnishes (Optional)

  • 1 tablespoon fresh thyme or parsley for garnish
  • Grated parmesan cheese ensure it's a Halal-certified brand

Preparation

  • Start by melting the butter in a large saucepan over medium heat. Add the sliced onions and let them cook low and slow, stirring occasionally, for about 15-20 minutes, until they are golden brown and caramelized.
  • Once the onions are caramelized, stir in the rinsed rice and garlic powder, cooking for an additional 1-2 minutes to coat the rice with the flavors.
  • Pour in the vegetable broth and season with salt and pepper. Bring the mixture to a boil, then reduce the heat to low and cover the pot with a lid.
  • Allow the rice to simmer for about 18-20 minutes, or until the rice is tender and the liquid has been absorbed.
  • Once done, remove from heat and let it sit for a few minutes. Fluff the rice with a fork, and for an extra layer of richness, you can stir in a little more butter or sprinkle with grated parmesan cheese if desired.
  • Finally, sprinkle with fresh herbs before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, add a splash of broth or water to the rice and warm it over medium heat on the stove, or microwave until heated through.
