Preparation

  • In a large mixing bowl, combine the flour, sugar, baking powder, baking soda, and salt. Whisk together until well blended.
  • In a separate bowl, whisk together the buttermilk, egg, and vegetable oil until smooth.
  • Slowly pour the wet mixture into the dry ingredients, stirring until just combined. Gently fold in chocolate chips or blueberries if using.

Cooking

  • In a large skillet over medium heat, add a bit of cooking spray or oil and allow it to heat until shimmering.
  • Using a tablespoon, drop batter onto the skillet, making small rounds. Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown.

Serving

  • Remove from the skillet and let cool slightly. Serve warm with your favorite toppings like syrup, fruit, or whipped cream.

Notes

You can substitute all-purpose flour for gluten-free flour or use dairy-free milk for a lactose-free version. Ensure freshness of baking powder and baking soda for best results. Store leftovers in an airtight container for up to 3 days, or freeze for up to a month.
