For the Strawberries

  • 1 pound fresh strawberries, hulled and halved
  • 1 tablespoon sugar for tossing strawberries

For the Batter

  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup buttermilk
  • 1 large egg

For Frying

  • Powdered sugar for dusting optional

Preparation

  • Begin by washing the strawberries, hulling, and halving them. Toss them in a bowl with a tablespoon of sugar and set aside to let the juices mingle.
  • In a mixing bowl, combine the flour, 1 tablespoon of sugar, baking powder, baking soda, and salt. In another bowl, mix the buttermilk and egg, then stir it into the dry ingredients until smooth.
  • In a heavy-bottomed pot, heat about two inches of oil over medium heat until it’s hot but not smoking (around 350°F or 175°C).

Cooking

  • Coat the strawberries: Dip the sugared strawberries into the batter, allowing the excess to drip off.
  • Carefully drop the battered strawberries into the hot oil. Fry until golden brown, about 2-3 minutes. Make sure not to overcrowd the pot.
  • Once fried, transfer the strawberries to a paper towel-lined plate to drain excess oil. Optionally, dust with powdered sugar for an extra sweet touch.
  • Assemble the deep-fried strawberries over a base of shortcake or biscuits, and enjoy while still warm!

Notes

For best results, ensure oil is hot enough and monitor frying time to avoid greasy or soggy strawberries. Consider adding whipped cream or chocolate sauce as toppings.
