Pasta and Shrimp

  • 12 oz fettuccine pasta (fresh or dried)
  • 1 lb shrimp (peeled and deveined, preferably large) Use fresh or thawed frozen shrimp.

Sauce Ingredients

  • 2 tablespoons olive oil For sautéing.
  • 3 cloves garlic (minced) For aromatic flavor.
  • 1 cup heavy cream Provides a luscious, creamy texture.
  • 1/2 cup grated Parmesan cheese For a cheesy flavor boost.
  • 1 teaspoon salt To enhance flavor.
  • 1/2 teaspoon black pepper For a little zest.
  • 1 teaspoon dried Italian herbs Or use fresh, if preferred.
  • 1 tablespoon fresh parsley (chopped) As a garnish.

Instructions
 

Cooking the Pasta

  • Boil a large pot of salted water. Add the fettuccine and cook according to package instructions until al dente. Save about 1/2 cup of the pasta water and then drain the noodles.

Sautéing the Shrimp

  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about a minute until fragrant.
  • Add the shrimp, sprinkle with salt, pepper, and Italian herbs. Cook for 2-3 minutes on each side or until fully cooked and pink.

Making the Creamy Sauce

  • Reduce the heat to low and pour the heavy cream into the skillet with the shrimp. Mix in the Parmesan cheese, gently stirring until the cheese melts and the sauce thickens.
  • If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

Combining and Serving

  • Add the cooked fettuccine to the skillet and toss everything together, ensuring the noodles are fully coated in the creamy sauce.
  • Allow to simmer for another minute to meld the flavors, then garnish with fresh parsley and additional Parmesan if desired. Serve hot.

Notes

Use fresh, halal shrimp for the best flavor. If using frozen, ensure you thaw them completely before cooking. For a lighter dish, consider substituting half of the heavy cream with low-fat milk or a plant-based cream.
