Ingredients
  

For the Banana Bread

  • 3 pieces ripe bananas (mashed) Use overripe bananas for maximum sweetness.
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg (beaten)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup walnuts or pecans (optional) Use nuts of choice or omit entirely.

For Salted Caramel Glaze

  • 1 cup brown sugar
  • 1/2 cup heavy cream
  • 1/4 cup butter
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, mash the ripe bananas thoroughly. Stir in the melted butter until well combined.
  • Sprinkle the baking soda and salt over the mixture. Then mix in the sugar, beaten egg, and vanilla extract.
  • Gradually fold in the all-purpose flour until just combined. If you're adding nuts, now’s the time!
  • Grease a 4×8 inch loaf pan or line it with parchment paper for easy removal.
  • Transfer the banana bread batter into the prepared loaf pan, smoothing the top with a spatula.

Baking

  • Place the pan in the oven and bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  • Once baked, let it cool in the pan for about 10 minutes before transferring it to a wire rack.

Making the Glaze

  • Combine the brown sugar, heavy cream, and butter in a saucepan over medium heat to make the salted caramel glaze. Stir until melted and bring to a boil.
  • Reduce heat to low and add sea salt and vanilla extract, then remove from heat.

Serving

  • When the bread has cooled slightly, drizzle the salted caramel glaze generously on top.

Notes

To store the banana bread, wrap it tightly in plastic wrap or tin foil and keep it in the refrigerator for up to a week. It also freezes well for up to three months. Simply thaw at room temperature or microwave for a few seconds for a fresh-out-of-the-oven snack.
