  • 1 pound ground beef (or a plant-based substitute)
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

  • In a large pot over medium heat, add the ground beef and cook until browned. Add the diced onion and minced garlic, cooking until the onion becomes translucent.
  • Sprinkle in the chili powder, cumin, and paprika. Stir well to coat the meat and onions in the glorious spices.
  • Pour in the crushed tomatoes, kidney beans, and black beans. Mix everything together and bring the pot to a simmer.
  • Reduce the heat to low and let the chili simmer for about 30 minutes.
  • Give it a taste and adjust the seasoning with salt and pepper to your liking.
  • Serve hot with your choice of toppings, and enjoy.

Notes

Chili can be customized with various toppings such as avocado, cheese, or jalapeños. Store leftovers in an airtight container and refrigerate for up to 4 days, or freeze for up to 3 months.
