  • 1 bag 32 oz frozen tater tots Use your preferred brand.
  • 2 cups mixed vegetables (like peas, carrots, and corn, thawed)
  • 1 cup diced onion
  • 2 cloves garlic, minced
  • 1 cup dairy-free cream (like coconut or almond milk) Choose your favorite non-dairy cream.
  • 1 tablespoon nutritional yeast For a cheesy flavor.
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt Adjust according to taste.
  • 1/2 teaspoon pepper Adjust according to taste.
  • 2 tablespoons olive oil For sautéing.

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a large skillet, heat the olive oil over medium heat. Sauté the diced onion until translucent (about 3-4 minutes).
  • Add the minced garlic and sauté for another minute until fragrant.
  • Stir in the mixed vegetables, nutritional yeast, onion powder, garlic powder, salt, and pepper. Cook for an additional 3-5 minutes until warmed through.
  • Pour in the dairy-free cream and stir until well combined. Remove from heat.
  • In a greased baking dish, spread the sautéed vegetable mixture evenly at the bottom. Arrange the frozen tater tots on top in a single layer.
  • Bake in the preheated oven for 25-30 minutes or until the tater tots are golden brown and crispy.
  • Allow to cool for a few minutes before serving.

Notes

For substitutions, try different vegetables or chickpeas for added protein. Keep an eye on the casserole during the last few minutes of baking for the perfect crust. Avoid overcrowding the tater tots for optimal crispiness.
