Main Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz pasta of your choice (use gluten-free if needed)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup dairy-free cooking cream
  • 1 cup chicken broth (halal)
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions

Cooking Instructions

  • Begin by boiling a large pot of salted water. Add your pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat olive oil over medium heat. Add the chicken pieces, season with salt and pepper, and sauté until golden brown and cooked through—about 6-8 minutes. Remove from the skillet and set aside.
  • In the same skillet, reduce the heat and add minced garlic, stirring until fragrant (about 1 minute). Pour in the chicken broth and scrape any bits from the bottom of the skillet. Add the dairy-free cooking cream and Italian seasoning. Stir and let the mixture simmer for about 5 minutes until it thickens slightly.
  • Add the cooked pasta and sautéed chicken back into the skillet. Toss everything together until well coated in the sauce. Taste and adjust seasonings as needed.
  • Plate your creation and garnish with fresh parsley.

Notes

Consider substituting chicken for plant-based protein like tempeh or tofu for a vegan version. Herb pairings like fresh basil or oregano can enhance flavor. Store leftovers in an airtight container for up to 3 days and reheat gently.
