  • 1 can chickpeas, drained and rinsed
  • 1/2 cup diced cucumbers
  • 1/2 cup diced bell peppers (any color)
  • 1/4 cup red onion, finely chopped
  • 1/2 cup plain yogurt (or vegan alternative)
  • 2 tablespoons curry powder
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Preparation

  • Start by draining and rinsing the can of chickpeas.
  • Dice your cucumbers and bell peppers into small, uniform pieces.
  • Finely chop the red onion.

Mixing

  • In a separate bowl, combine yogurt, curry powder, lemon juice, salt, and pepper. Whisk until smooth.
  • In a large mixing bowl, add chickpeas, diced veggies, and the dressing. Toss gently to coat.
  • Taste the salad and adjust seasoning as needed.

Garnishing and Serving

  • Garnish with fresh cilantro.
  • Enjoy immediately or chill in the fridge for 30 minutes to enhance flavors.

Notes

For substitutions, use garam masala instead of curry powder. Leaving some chickpeas whole adds texture. Pairs well with pita bread.
