  • Wash your cucumbers and bell peppers thoroughly. Slice the cucumbers into bite-sized cubes and the bell peppers into strips or squares.
  • Peel your red onion and thinly slice it. Consider soaking the sliced onion in cold water for about 10 minutes to mellow its sharpness.

Assembly

  • In a large mixing bowl, combine the diced cucumbers, sweet bell peppers, and sliced red onion.
  • In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper until well combined.
  • Pour the dressing over the salad ingredients and toss gently until everything is well coated. Adjust the seasoning as necessary.
  • Let the salad sit in the refrigerator for about 30 minutes for the flavors to meld, if desired.
