Dough Ingredients

  • 3 cups all-purpose flour, plus extra for dusting Choose quality flour for better texture.
  • 1.5 teaspoons salt
  • 1 teaspoon instant yeast
  • 1.5 cups warm water (around 110°F or 43°C) Ensure the water is warm, not hot.

Preparation

  • In a large mixing bowl, combine 3 cups of all-purpose flour, salt, and instant yeast. Stir well until mixed. Slowly add in 1½ cups of warm water and mix until a shaggy dough forms.
  • Cover the bowl with plastic wrap or a kitchen towel. Allow the dough to rise at room temperature for 12 to 18 hours.

Shaping and Baking

  • Once the dough has risen, sprinkle a clean surface with flour, turn the dough onto the floured surface, dust it lightly with flour, and divide it into four equal parts. Shape each portion into a mini baguette.
  • Preheat your oven to 450°F (230°C) for at least 30 minutes. Place a baking stone or an inverted baking sheet in the oven to heat.
  • Lightly dust the tops of the shaped baguettes with flour and make 2 or 3 diagonal slashes with a sharp knife. Transfer them to the hot baking surface and bake for 20-25 minutes or until golden brown.
  • Remove the baguettes from the oven and let them cool on a wire rack. Once they’re easy to handle, slice and serve warm.

Notes

For added flavor, consider mixing in dried herbs or spices. If you're short on time, a quicker rise can work, but a longer rise improves flavor. Handle the dough gently to avoid density.
