Preheat your oven to 350°F (175°C). Grease a pie dish or a similar baking dish.
In a mixing bowl, combine the shredded coconut, sugar, flour, baking powder, and salt.
In another bowl, whisk together the eggs, milk, vanilla extract, and melted butter until well combined.
Gradually add the wet ingredients to the dry ingredients and mix until just combined.
Pour the mixture into the prepared pie dish.
Bake for 30-40 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
Allow to cool before serving.
Serve plain or with optional toppings such as whipped cream or additional coconut flakes.
