Ingredients
  

For the Chicken

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 1 egg, beaten
  • 2 cups panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Sauce

  • 3 tablespoons soy sauce (use low-sodium if preferred)
  • 2 tablespoons honey or agave syrup for a vegan option
  • 1 teaspoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon ginger, minced

For Tacos

  • 8 small corn or flour tortillas
  • 1 cup shredded cabbage
  • 1 carrot, julienned
  • 1 cucumber, thinly sliced
  • to taste Fresh cilantro for garnish
  • to taste Lime wedges for serving

Instructions
 

Preparation

  • In a bowl, mix the flour, garlic powder, onion powder, salt, and pepper. In another bowl, place the beaten egg. In a third bowl, place the panko breadcrumbs.
  • Dip each piece of chicken into the flour mixture, then into the egg, and finally into the panko breadcrumbs. Ensure each piece is well-coated for maximum crunch!

Cooking

  • Heat oil in a deep frying pan over medium-high heat. Once hot, carefully place the chicken pieces into the oil in batches. Fry until golden brown and cooked through, roughly 5-7 minutes. Remove and place on paper towels to drain any excess oil.

Sauce Preparation

  • While the chicken is frying, whisk together the soy sauce, honey, sesame oil, rice vinegar, and minced ginger in a small bowl until smooth. Adjust seasoning if necessary.

Assembly

  • Warm the tortillas either on a skillet or in the microwave. Lay down a generous amount of shredded cabbage, followed by a few pieces of fried chicken. Add the julienned carrots, sliced cucumbers, and drizzle your delightful sauce on top. Garnish with fresh cilantro and serve with lime wedges.
