  • 2.5 cups all-purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt

Wet Ingredients

  • 1 cup unsalted butter, softened Ensure butter is softened but not melted.
  • 1 cup granulated sugar
  • 2 tablespoons key lime juice Regular lime juice can be substituted.
  • 0.5 teaspoon vanilla extract

For Dusting

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  • In a large mixing bowl, cream the softened butter and granulated sugar together until light and fluffy, about 2-3 minutes.
  • Add the egg, key lime juice, zest, and vanilla extract. Mix until well combined.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  • Drop dollops of dough onto a baking sheet lined with parchment paper, leaving space for spreading.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are light golden.
  • Allow cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
  • Dust with powdered sugar before serving if desired.

Notes

Store cookies in an airtight container separated by parchment paper to prevent sticking. They'll stay fresh for up to a week at room temperature, or freeze for longer storage.
