  • 1 pound white beans (such as Great Northern), dried and rinsed Can soak overnight or use quick soak method.
  • 8 cups chicken broth Ensure it’s halal-certified.
  • 1 pound turkey ham, diced You can substitute with another halal meat option like diced chicken breast.
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste

Preparation

  • Rinse the dried white beans thoroughly. Soak overnight or use the quick soak method by boiling them for 2 minutes, then letting them rest for an hour.
  • Dice the onion, carrots, and celery into bite-sized pieces and mince the garlic.

Cooking

  • In your crockpot, add the rinsed beans, turkey ham, chopped onion, carrots, celery, minced garlic, thyme, rosemary, salt, and pepper.
  • Pour in the 8 cups of chicken broth and gently stir to combine.
  • Cover your crockpot and set it to cook on low for 8 hours or high for 4 hours.
  • Once cooked, taste for seasoning and adjust salt and pepper as needed. Serve hot, topped with fresh herbs or cheese.

Notes

Consider using low-sodium broth if sensitive to sodium. The slow cooking process enhances flavor and texture. Ensure the beans are pre-soaked to avoid issues.
