Ingredients
  

Main Ingredients

  • 1 lb ground beef, turkey, or chicken You can choose any ground meat of your preference.
  • 1 can (15 oz) black beans, drained and rinsed Any beans can be used.
  • 1 can (15 oz) corn, drained Fresh or frozen corn could also be used.
  • 1 can (10 oz) diced tomatoes with green chilies Adds spice and flavor.
  • 1 packet taco seasoning
  • 1 cup shredded cheese (cheddar or Mexican blend) Cheese can be added based on preference.

Toppings

  • sour cream For serving.
  • chopped green onions For serving.
  • diced tomatoes For serving.
  • avocado For serving.

Instructions
 

Preparation

  • In a skillet over medium heat, brown the ground meat until fully cooked; drain excess fat.
  • In the Crockpot, add the cooked meat, black beans, corn, diced tomatoes, and taco seasoning. Stir until well combined.

Cooking

  • Cover the Crockpot and cook on low for 4-6 hours or on high for 2-3 hours.
  • About 30 minutes before serving, sprinkle the shredded cheese over the casserole. Cover and let it melt.

Serving

  • Once everything is heated through, serve hot with your choice of toppings.

Notes

Leftover Crockpot Taco Casserole can be stored in the refrigerator for up to 3-4 days. It can also be frozen for up to 3 months.
