  • 1 pound kielbasa sausage, sliced Choose turkey or chicken kielbasa for a lighter option.
  • 4 cups fresh green beans, trimmed
  • 4 medium-sized potatoes, diced (Russet or Yukon Gold work great)
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Optional: fresh herbs for garnish Fresh herbs can enhance flavor.

Preparation

  • Start by slicing your kielbasa into bite-sized pieces. Chop the potatoes into cubes and trim the green beans. Lastly, mince the garlic and chop the onion.
  • In your crockpot, place the diced potatoes at the bottom. This will give them a head start on cooking!
  • Layer the sliced kielbasa on top of the potatoes.
  • Add the chopped onion and minced garlic over the sausage. Then, layer in the fresh green beans.
  • Pour the vegetable broth over the entire mixture, making sure everything is well moistened. Add the salt and pepper.
  • Cover and set your crockpot to cook on low for 6-8 hours or on high for 3-4 hours, until the potatoes are tender and the flavors meld beautifully.
  • Give everything a good stir before serving and garnish with fresh herbs if desired.

Notes

Store leftovers in an airtight container in the fridge for up to three days or freeze for up to three months. Reheat on the stove or in the microwave with a splash of broth to retain moisture. You can also swap out the green beans for other veggies like carrots or bell peppers for variety.
