  • 4 pieces boneless, skinless chicken breasts
  • 1 lb baby potatoes, halved Cut into even halves for even cooking.
  • 4 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese Feel free to sprinkle extra on top when serving.
  • 1/4 cup chicken broth
  • 1 tsp Italian seasoning Adjust seasoning to taste.
  • to taste Salt and pepper
  • 2 tbsp fresh parsley, chopped (for garnish) Garnish before serving.

Preparation

  • Place chicken breasts in the crockpot.
  • Add halved baby potatoes around the chicken.
  • In a bowl, mix minced garlic, Parmesan cheese, chicken broth, Italian seasoning, salt, and pepper.
  • Pour the mixture over the chicken and potatoes.

Cooking

  • Cook on low for 6-8 hours or high for 3-4 hours until the chicken is cooked through and potatoes are tender.
  • Garnish with fresh parsley before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or on the stove until heated through. You can substitute chicken thighs for a richer flavor, and add vegetables like carrots or green beans for more nutrition.
