  • 1 pound baby potatoes, halved Cut in half to ensure even cooking.

  • 4 cloves garlic, minced Adjust the amount based on your garlic preference.
  • 1 teaspoon Italian seasoning Adds a blend of herbs.

Preparation

  • Place the chicken breasts in the bottom of the crockpot.
  • Add the halved baby potatoes on top of the chicken.
  • In a bowl, whisk together Parmesan cheese, minced garlic, Italian seasoning, salt, pepper, and olive oil.
  • Pour the cheese mixture over the chicken and potatoes.

Cooking

  • Cover and cook on low for 6-8 hours or high for 4 hours, until the chicken is cooked through and potatoes are tender.

Serving

  • Serve garnished with chopped parsley if desired.

Notes

If you have leftovers, allow the dish to cool first and store in an airtight container in the refrigerator for up to 3 days. It can also be frozen for up to 2 months. You can add other vegetables for more flavor and adjust the garlic according to preference.
