  • 1 cup beef broth For the sauce.
  • 1 teaspoon Italian seasoning Adds flavor to the beef.

Preparation

  • Begin by cutting your beef stew meat into bite-sized pieces.
  • Rinse the baby potatoes and halve them.

Seasoning and Layering

  • In a bowl, generously season the beef pieces with salt, pepper, and Italian seasoning.
  • Place the halved potatoes at the bottom of your crockpot.
  • Layer the beef over the potatoes in the crockpot.

Making the Sauce

  • In a separate bowl, melt the butter in the microwave.
  • Stir in minced garlic and beef broth until well combined.
  • Pour the garlic butter sauce over the beef and potatoes in the crockpot.

Cooking

  • Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.

Serving

  • Once cooked, give everything a gentle stir.
  • Serve hot, garnished with fresh parsley.

Notes

Serve with steamed green beans or a fresh garden salad. A crusty loaf of bread is perfect for soaking up the sauce. For leftovers, store in an airtight container for up to 3 days or freeze for up to 3 months. Reheat in the microwave with a splash of broth.
