  • 3-4 pounds chuck roast Choose a well-marbled roast for optimal tenderness.
  • 1 can (10.5 oz) French onion soup
  • 1 packet onion soup mix
  • 1 cup beef broth
  • 2-3 onions sliced
  • 2-3 cloves garlic, minced
  • to taste Salt and pepper Essential for seasoning.
  • as needed Fresh thyme or parsley for garnish Optional but recommended.

Preparation

  • Season your chuck roast with salt and pepper on all sides.
  • Sear the roast in a skillet over medium-high heat until browned on all sides, if time allows.
  • Layer the sliced onions and minced garlic in the bottom of your crockpot.
  • Place the seasoned roast on top of the onions and garlic.
  • In a separate bowl, mix the French onion soup, onion soup mix, and beef broth. Pour over the roast.
  • Cover and set the crockpot to low for 8-10 hours, or high for 4-6 hours.
  • Once done, slice the roast and serve hot, garnished with fresh thyme or parsley if desired.

Notes

For optimal flavor, avoid skipping the seasoning. Store leftovers in an airtight container for up to three days, or freeze for up to three months. Reheat gently.
