  • 2 lbs boneless, skinless chicken breasts
  • 1 lb fresh broccoli florets
  • 1 cup chicken broth
  • 1 cup heavy cream Can be substituted with half-and-half or coconut cream.
  • 2 cups shredded cheddar cheese For a richer flavor, use freshly grated cheese.
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  • Sprinkle garlic powder, onion powder, salt, and pepper over the chicken.
  • Lay fresh broccoli florets over the seasoned chicken, then pour in the chicken broth.
  • Cover the crockpot and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and tender.

Creamy Finish

  • About 30 minutes before serving, stir in the heavy cream and shredded cheddar cheese, mixing until the cheese is melted and the sauce is creamy.
  • Once ready, serve this creamy goodness hot over rice, pasta, or even on its own!

Notes

Storing: Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, warm in a saucepan or microwave. Freezing: Can be frozen for up to three months—thaw and reheat when ready.
