Main Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1 packet ranch seasoning mix
  • 8 oz cream cheese, softened Can use low-fat alternative
  • 1 cup shredded cheddar cheese
  • 1 cup chicken broth Helps keep chicken moist

Optional Toppings

  • chopped green onions
  • crispy bacon bits
  • sour cream

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts in the bottom of the slow cooker.
  • Sprinkle the ranch seasoning mix evenly over the chicken.
  • Cut the softened cream cheese into smaller chunks and place it on top of the chicken and ranch.
  • Add the chicken broth to keep the chicken moist and add flavor.

Cooking

  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through and easily shredded with a fork.
  • Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the crockpot.
  • Stir in the shredded cheddar cheese until melted and well combined.
  • Add your favorite toppings and serve hot!

Notes

Store leftovers in an airtight container for up to 3-4 days. Can freeze for up to three months. Thaw in the fridge before reheating.
