  • 2 lbs boneless, skinless chicken breast, cut into chunks
  • 8 oz spaghetti pasta
  • 1 can cream of chicken soup (10.5 oz)
  • 1 can diced tomatoes with green chilies (10 oz)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese

Seasoning

  • 1 tbsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Garnish

Preparation

  • Start by cutting your chicken breast into bite-sized pieces. Season with salt, pepper, garlic powder, and onion powder.

Layering Ingredients

  • In your slow cooker, place the seasoned chicken on the bottom. Pour the cream of chicken soup and diced tomatoes over the chicken. Stir gently to combine.

Cooking

  • Cover the slow cooker and set it on low heat for 4-6 hours or high heat for 2-3 hours until the chicken is tender and easily shredded with a fork.

Adding Spaghetti

  • About 20-30 minutes before serving, cook your spaghetti according to package instructions until al dente. Drain and stir into the slow cooker.

Mixing in Cheeses

  • Sprinkle the shredded cheddar and mozzarella cheese over the pasta and stir until well combined and creamy. Allow it to heat for the remaining 20-30 minutes.

Serving

  • Once melted and heated, serve hot with an optional sprinkle of fresh parsley on top.

Notes

Substitutions include using turkey or plant-based protein for a vegetarian option. Ensure spaghetti is not overcooked in the slow cooker.
