  • 1 lb ground turkey (Halal)
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 cups ricotta cheese
  • 3 cups spinach, chopped
  • 12 oz lasagna noodles, broken into pieces
  • 2 cups mozzarella cheese, shredded
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

  • In a skillet over medium heat, add the ground turkey. Cook until browned, breaking it apart as it cooks, about 6-8 minutes. Drain any excess fat.
  • In your slow cooker, combine the cooked turkey, chopped onion, minced garlic, chicken broth, ricotta cheese, and Italian seasoning. Stir well until all ingredients are combined.
  • Gently fold in the broken lasagna noodles and chopped spinach. Season with salt and pepper to taste.
  • Cover and cook on low for 4-6 hours, or until the noodles are tender.
  • About 30 minutes before serving, stir in the shredded mozzarella cheese, allowing it to melt and become wonderfully gooey.
  • Once cooked, serve warm with your choice of toppings, such as fresh basil or more cheese!

Notes

To retain the perfect noodle texture, make sure to break them into smaller pieces to prevent sogginess. Leftovers can be stored in an airtight container in the refrigerator for up to four days or frozen for up to three months.
