  • 3 pounds fresh tomatoes, diced (about 12 medium-sized) The fresher the tomatoes, the richer the sauce.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon sugar (optional, to balance acidity)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil

Preparation

  • Start by washing the fresh tomatoes and dicing them into small pieces.
  • Chop the onion and mince the garlic.

Cooking

  • In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 2-3 minutes, until fragrant and translucent.
  • Add minced garlic and cook for another minute.
  • Transfer the sautéed onions and garlic to the crock pot. Add the diced tomatoes, along with sugar, oregano, basil, salt, and pepper.
  • Set your crock pot to low and cook for 6-8 hours, or high for about 3-4 hours.

Finishing Touches

  • Once the sauce is done, you can opt to blend it for a smoother consistency or leave it chunky.
  • Before serving, taste the sauce and adjust the seasoning as necessary.

Notes

Store leftovers in an airtight container in the fridge for up to five days or freeze in pre-portioned servings for up to three months.
