  • Place the boneless, skinless chicken breasts at the bottom of your crock pot. Season with salt and pepper to taste.
  • Layer the sliced bell pepper and onion over the chicken, creating a colorful mix.
  • Pour the can of diced tomatoes with green chilies over the veggies and chicken, ensuring everything is coated in those flavorful juices.
  • Sprinkle the fajita seasoning evenly over the top, adding a punch of flavor.
  • Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is fully cooked and tender.
  • Once done, shred the chicken using two forks right in the crock pot. Stir everything together for that perfect blend of flavors.

Notes
