Ingredients
  

Potato Base

  • 2 pounds potatoes, thinly sliced Use a mandoline slicer for even slices.
  • 1 cup shredded cheddar cheese Any cheese can be used.
  • 1 cup cream of mushroom soup Can be swapped for cream of chicken or homemade cheese sauce.
  • 1 cup milk
  • 1 onion, finely chopped
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese

Instructions
 

Preparation

  • In a greased crock pot, layer half of the sliced potatoes, followed by half of the chopped onion and half of the cheddar cheese. Repeat the layers.
  • In a bowl, mix the cream of mushroom soup, milk, salt, and pepper. Pour this mixture over the layered potatoes.
  • Sprinkle the Parmesan cheese on top.

Cooking

  • Cover and cook on low for 6-8 hours, or until potatoes are tender and the cheese is melted.

Notes

Store leftovers in an airtight container in the refrigerator for about 3-4 days. For longer storage, freeze after cooling completely. For a crunchy topping, sprinkle breadcrumbs on top during the last 30 minutes of cooking.
