Ingredients
  

For the Carrots

  • 1 lb baby carrots or regular carrots, peeled and cut into similar-sized chunks
  • 2 tablespoons olive oil
  • Salt to taste Salt

For the Garlic Butter

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced

Optional Garnish

  • Fresh parsley chopped for garnish

Preparation

  • Preheat your oven to 425°F (220°C).
  • If using regular carrots, peel and cut them into similar-sized pieces. For baby carrots, gently smash them to create a flat surface.

Seasoning and Roasting

  • Toss the smashed carrots with olive oil, salt, and pepper in a mixing bowl until evenly coated.
  • Spread the carrots on a baking sheet in a single layer and roast for 20-25 minutes, or until golden brown and crispy.

Garlic Butter Preparation

  • While the carrots are roasting, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Combining and Serving

  • Once the carrots are roasted, drizzle the garlic butter over them and toss gently to coat.
  • Transfer the carrots to a serving dish and garnish with fresh parsley, if desired.
  • Enjoy your crispy creation!

Notes

Store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes for best texture. Can be frozen for up to 1 month.
