  • 1 pound carrots, peeled and cut into large chunks
  • 2 tablespoons olive oil
  • Salt, to taste
  • Black pepper, to taste

Preparation

  • Preheat your oven to 425°F (220°C).
  • In a pot of salted water, boil the carrot chunks for about 10-15 minutes until fork-tender but not mushy. Drain and let cool slightly.
  • Place boiled carrots on a baking sheet lined with parchment paper. Using a glass bottom or potato masher, gently press down on each carrot until flattened.
  • Drizzle olive oil over the smashed carrots, and sprinkle with salt, black pepper, and any optional spices.

Baking

  • Bake the baking sheet in the preheated oven for 20-25 minutes until the edges are golden and crispy.
  • Let the bites cool slightly before serving. Enjoy them warm!

Notes

To keep Crispy Smashed Carrot Bites fresh, store in an airtight container in the refrigerator for up to 3 days. Reheat in a preheated oven at 350°F (175°C) for about 5-10 minutes to regain crunch.
