  • 2 cups green cabbage, finely chopped

  • 1/4 cup sesame seeds, toasted

Dressing Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons honey or maple syrup
  • 2 tablespoons sesame oil

Seasoning

  • Salt and pepper, to taste
  • Oil for frying

Preparation

  • Season the chicken breasts with salt and pepper.
  • Heat some oil in a skillet over medium-high heat.
  • Once hot, add the chicken and cook for about 5-7 minutes on each side, or until golden brown and cooked through.
  • Let the chicken rest before slicing it into strips.

Making the Dressing

  • In a bowl, whisk together rice vinegar, soy sauce, honey (or maple syrup), and sesame oil until well combined.
  • Set the dressing aside.

Preparing the Salad

  • Chop the cabbage and shred the carrots.
  • Place the cabbage, carrots, and green onions in a large salad bowl.
  • In a dry skillet, toast the sesame seeds over medium heat, stirring often until they are golden and fragrant (about 3-5 minutes).

Combining and Serving

  • Add the sliced chicken to the bowl of veggies.
  • Drizzle with the dressing and sprinkle the toasted sesame seeds over the top.
  • Toss everything together until well mixed.
  • Serve the salad cold or at room temperature as a light meal or a side dish.

Notes

For a vegetarian version, substitute chicken with crispy tofu. You can prepare the dressing a day in advance and store it in the refrigerator. Consider adding peanuts or almonds for extra crunch.
