For the cheese sticks

  • 2 large large potatoes (preferably russet)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 each egg, beaten
  • 1 cup breadcrumbs Use gluten-free if needed
  • Salt and pepper, to taste
  • Oil for frying (vegetable or canola oil works well)

Preparation

  • Prepare the Potatoes: Start by peeling the potatoes and cutting them into quarters. Boil them in salted water until fork-tender—around 15-20 minutes. Drain and let them cool.
  • Mash the Potatoes: In a large mixing bowl, mash the cooled potatoes until smooth. Season with salt and pepper to taste.
  • Mix in Cheese: Stir in the shredded mozzarella and grated Parmesan until fully combined.
  • Shape the Sticks: Take a handful of the potato mixture and form it into a stick shape. Repeat until all the potato mix is used up.
  • Coat the Sticks: Dip each stick in the beaten egg and then roll it in the breadcrumbs to coat evenly.
  • Fry the Sticks: Heat oil in a deep pan over medium-high heat. Once hot, carefully add the sticks in batches. Fry until golden brown and crispy—about 3-4 minutes per side.
  • Drain and Serve: Remove them using a slotted spoon and place them on paper towels to drain excess oil. Serve with your favorite dipping sauce, or enjoy them as they are!
