Ingredients
  

For the chicken

  • 2-3 pounds Chicken pieces (drumsticks, thighs, or breasts)
  • 2 cups Buttermilk For marinating the chicken

For the coating

  • 1 cup All-purpose flour
  • 1/2 cup Cornmeal
  • 1 tablespoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Paprika
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder

For baking

  • 1/4 cup Olive oil For drizzling over the chicken

Preparation

  • Place the chicken pieces in a large bowl. Pour the buttermilk over the chicken, ensuring it’s evenly coated. Cover with plastic wrap and refrigerate for at least 30 minutes.

Cooking

  • Preheat your oven to 425°F (220°C).
  • In a separate bowl, combine the flour, cornmeal, salt, black pepper, paprika, garlic powder, and onion powder.
  • Remove the chicken from the buttermilk and allow the excess to drip off. Dredge each piece in the flour mixture, making sure it’s fully coated.
  • Drizzle the olive oil over the chicken pieces on a baking sheet.
  • Bake for about 40-45 minutes or until the chicken is crispy and golden brown, and internal temperatures reach 165°F (74°C).
  • Let the chicken rest for a few minutes before serving.

Notes

For more flavor, marinate the chicken overnight in buttermilk. Experiment with spices to customize the coating. Don’t crowd the pan while baking for maximum crispiness.
