Ingredients
  

For the roll ups

  • 1 cup almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened almond milk
  • 2 large eggs
  • 1 tablespoon melted butter

For the filling

  • 8 oz cream cheese (softened) Ensure room temperature for easy spreading.
  • 1/4 cup erythritol (or your favorite keto sweetener)
  • 2 teaspoons cinnamon

For topping

  • 2 tablespoons melted butter
  • 1 tablespoon erythritol
  • 1 teaspoon cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet lined with parchment paper.
  • In a bowl, combine the almond flour, coconut flour, baking powder, and salt. Stir well so there are no lumps.
  • In another bowl, whisk together the almond milk, eggs, and melted butter until well combined. Gradually mix this into the dry ingredients, stirring until a dough forms.
  • Place the dough between two pieces of parchment paper and roll it out into a rectangle about 1/4 inch thick.
  • In a separate bowl, mix softened cream cheese, erythritol, and cinnamon until smooth.
  • Evenly spread the cream cheese mixture over the rolled dough.
  • Carefully lift one edge and roll the dough into a log. Using a sharp knife, cut the log into slices of desired thickness.

Baking

  • Place the slices on the prepared baking sheet and bake for 15–20 minutes until golden brown.

Serving

  • While the rolls are baking, mix melted butter, erythritol, and cinnamon in a small bowl. Brush this mixture onto the warm rolls as soon as they come out of the oven.
  • Let the rolls cool slightly, then serve warm and enjoy their delightful flavor.

Notes

Dough Consistency: Make sure the dough is not too sticky; if it is, add a tiny bit more almond flour. Flavor Variations: Don’t hesitate to play around with the fillings! Add vanilla extract or even a dash of nutmeg for a unique twist. For a beautiful golden brown finish, you can brush the tops with an egg wash before baking.
