Ingredients
  

For the Salmon

  • 1 pound fresh salmon fillets (skin removed)
  • ½ cup all-purpose flour (or gluten-free flour)
  • 2 large eggs
  • 1 cup breadcrumbs (panko works great for extra crunch)
  • 2 tablespoons green onions, chopped for garnish
  • Salt and pepper, to taste
  • Oil, for frying (canola or vegetable oil works well)

For the Honey Garlic Sauce

  • ½ cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce (ensure it’s halal-certified)
  • 1 tablespoon fresh ginger, minced (optional)

Instructions
 

Preparation

  • Start by cutting the fresh salmon fillets into bite-sized pieces. Season lightly with salt and pepper.
  • In one bowl, place the flour. In a second bowl, beat the eggs. In a third bowl, add the breadcrumbs.

Breading and Cooking

  • Take each salmon piece, first coat it in flour, then dip into the beaten eggs, and finally cover it with breadcrumbs.
  • In a large pan, add enough oil to cover the bottom (about ½ inch). Heat over medium-high heat until shimmering.
  • Fry the salmon pieces in batches, being careful not to overcrowd the pan. Cook each side for about 3-4 minutes or until they turn golden brown and crispy. Remove and drain on paper towels.

Making the Sauce

  • In a separate saucepan on medium heat, whisk together honey, minced garlic, soy sauce, and ginger if using. Cook for about 5 minutes until slightly thickened.
  • Toss the crispy salmon bites in the honey garlic sauce until well-coated.

Serving

  • Serve hot, garnished with chopped green onions.

Notes

Make it a meal by serving with steamed vegetables or over rice. Store leftovers in an airtight container in the refrigerator for up to 3 days.
