Ingredients

Onion Rings

  • 2 large large onions Sweet onions like Vidalia or Walla Walla are preferred.

Batter

  • 1 cup gluten-free all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup cold sparkling water Gradually add until you achieve a smooth batter.

Coating

  • 1 cup gluten-free breadcrumbs (or crushed gluten-free cereal)
  • Vegetable oil For frying.

Instructions

Preparation

  • Slice the onions into thick rings, about half an inch wide. Separate the rings and set them aside in a bowl.
  • In a mixing bowl, whisk together the gluten-free flour, baking powder, garlic powder, paprika, salt, and pepper. Gradually add in the cold sparkling water, mixing until you achieve a smooth batter.

Coating

  • Dip each onion ring into the batter, ensuring it’s completely coated. Allow any excess batter to drip off before moving on to the breadcrumbs.
  • Roll the battered onion rings in the gluten-free breadcrumbs until they are well coated.

Frying

  • In a deep skillet, heat vegetable oil over medium-high heat. Carefully place the coated onion rings into the hot oil, frying them in batches until they are golden brown and crispy (about 2-3 minutes).
  • Remove the fried onion rings and let them drain on a plate lined with paper towels. Serve immediately with your favorite dipping sauces.

Notes

For best results, ensure the rings are well-coated and the oil is hot enough before frying. Experiment with spices for more flavor. Store leftovers in an airtight container in the refrigerator for 1-2 days.
