  • 2 large potatoes (about 1 pound, peeled and grated)
  • 1 small onion (grated)
  • 1 large egg
  • 1/4 cup all-purpose flour

Preparation

  • Peel and grate the potatoes into a bowl. Place them in a clean kitchen towel and squeeze out the excess moisture.
  • In a mixing bowl, combine the grated potatoes, grated onion, egg, flour, salt, and pepper. Mix well to combine.

Cooking

  • In a large frying pan, pour in enough oil to cover the bottom. Heat over medium-high until the oil shimmers.
  • Using a spoon, drop dollops of the potato mixture into the hot oil. Flatten them slightly with the back of the spoon and fry until golden brown on one side (about 3-4 minutes). Flip and cook until the other side is golden.
  • Once cooked, remove the pancakes and place them on paper towels to drain and absorb excess oil. Serve warm with your favorite toppings.

Notes

For an extra zing, consider adding herbs like parsley or chives to the mixture before cooking. Squeeze out as much moisture as possible from the grated potatoes to achieve a crispy texture.
