  • 1 teaspoon olive oil
  • 3/4 cup warm water

Preparation

  • In a large bowl, combine flour and salt.
  • Add the olive oil and warm water gradually while mixing until a soft dough forms.
  • Knead the dough for about 5 minutes until smooth, then cover it with a damp cloth and let it rest for 10 minutes.

Filling Preparation

  • While the dough is resting, mix together your desired fillings. For a classic version, combine feta cheese, spinach, and herbs in a bowl.
  • If you’re opting for a meat filling, make sure it’s seasoned well and cooked beforehand.

Rolling and Cooking

  • On a lightly floured surface, divide the dough into equal-sized balls.
  • Roll each ball into a thin circle, about 12 inches in diameter.
  • Place a generous amount of your filling on one half of the dough circle, leaving some space around the edges.
  • Fold the other half over the filling, creating a semicircle. Press the edges firmly to seal.
  • Heat a non-stick skillet over medium heat. Place the sealed Gozleme in the skillet and cook for 3-4 minutes on each side, until golden brown and crispy.
  • Repeat for remaining dough and fillings.

Serving

  • Slice the Gozleme into wedges and serve warm, perhaps with a dollop of yogurt or a sprinkle of fresh herbs on top.

Notes

Allowing the dough to rest is crucial for achieving that flaky texture. Experiment with different fillings to suit your taste. Ensure your skillet is well heated for even cooking.
