Batter Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cornstarch
  • 1 cup soda water Club soda works too!
  • 1 tsp baking powder
  • A pinch of salt

Frying Ingredients

  • 1 cup marshmallows Mini or regular size
  • Oil for frying Vegetable or canola oil recommended

Preparation

  • In a large pot or deep fryer, fill with enough oil to submerge the marshmallows. Heat the oil to 350°F (175°C).
  • In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually add in the soda water, whisking until you achieve a smooth, pancake-like batter.
  • Dip each marshmallow into the batter, ensuring it is fully coated.

Frying

  • Carefully drop the battered marshmallows into the hot oil, a few at a time, being cautious not to overcrowd the pot. Fry for about 1-2 minutes or until golden brown and crispy.
  • Use a slotted spoon to remove the marshmallows from the oil and let them drain on a paper towel-lined plate.

Serving

  • Serve the crispy treats warm. Pair them with your favorite dipping sauces!

Notes

These marshmallows are best enjoyed fresh. Store leftovers in an airtight container at room temperature for up to two days. Reheat in a preheated oven at 350°F (175°C) for about 5 minutes to re-crisp.
