Ingredients
  

For the filling

  • 1 cup Cabbage, shredded
  • 1 cup Carrots, julienned
  • 1 cup Bean sprouts
  • 1 cup Mushrooms, thinly sliced
  • 2 cloves Garlic, minced
  • 1 teaspoon Ginger, minced
  • 2 tablespoons Soy sauce

For assembling

  • 10-12 pieces Spring roll wrappers
  • for frying Vegetable oil Ensure sufficient oil for frying.

Preparation

  • Wash and prep all the vegetables. Shred the cabbage, julienne the carrots, and chop the green onions. Slice the mushrooms thinly to ensure even cooking.

Cooking the Filling

  • Heat a tablespoon of vegetable oil in a large pan over medium heat. Add the garlic and ginger, sautéing until fragrant.
  • Toss in the cabbage, carrots, mushrooms, and bean sprouts. Stir-fry until they’re just tender, about 5-7 minutes.
  • Add soy sauce to the vegetable mix and stir well to combine everything. Cook for another 2 minutes, then remove from heat. Allow the mixture to cool slightly.

Assembling and Frying

  • Lay one spring roll wrapper on a clean surface with a corner facing you. Place 2-3 tablespoons of the filling about 1/3 of the way up from the bottom corner.
  • Fold the bottom corner over the filling, then fold in the sides and roll it tightly. Seal the edge with a bit of water.
  • Heat enough vegetable oil in a deep pan over medium-high heat for frying. Once the oil is hot, carefully add the spring rolls, a few at a time, frying until golden brown and crispy, about 4-5 minutes. Drain on paper towels.

Serving

  • Enjoy hot, with sweet chili sauce or soy sauce for dipping!

Notes

Ensure your filling is completely cooled before wrapping; otherwise, the wrappers can become soggy. If you have leftovers, try freezing them. Just make sure to place parchment paper between layers. Don’t overcrowd the oil when frying; cook in batches for that perfect crispiness. Experiment with ingredients! Add some cooked chicken or shrimp for a protein kick!
