Ingredients
  

For the filling

  • 2 cups cooked, shredded chicken
  • 1 cup shredded cheese (like Monterey Jack or Cheddar) For an extra cheesy bite
  • 1 teaspoon taco seasoning

For assembling

  • 1 tablespoon olive oil
  • 10-12 pieces small flour or corn tortillas

Preparation

  • In a large bowl, combine the cooked shredded chicken and taco seasoning. Mix well to ensure the chicken is evenly coated.
  • Heat a skillet over medium heat. Lightly warm each tortilla for about 15 seconds on each side until pliable. This will prevent them from cracking while rolling.

Assembly

  • On each tortilla, add a few tablespoons of the chicken mixture and a sprinkle of cheese. Roll the tortilla tightly, tucking in the ends as you go.

Cooking

  • In the same skillet, heat the olive oil over medium-high heat. Carefully place the rolled taquitos seam-side down in the skillet. Fry them for about 2-3 minutes on each side, until golden brown and crispy.
  • Remove the taquitos from the skillet and place them on a paper towel to drain excess oil. Serve hot with your favorite toppings.

Notes

Consider making the filling in advance and store it in the fridge. You can also bake the taquitos at 400°F for about 20 minutes for a healthier option. Use fresh tortillas for better texture.
