Ingredients

For the Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 4 slices Swiss cheese (or your preferred cheese)
  • 4 slices chicken breast fillets (or turkey, if preferred)
  • 1 cup all-purpose flour
  • 2 large eggs beaten
  • 1 cup breadcrumbs (preferably Panko for extra crispiness)
  • Salt and pepper to taste
  • Cooking oil for frying enough to cover the bottom of the pan

Instructions

Preparation

  • Place the chicken breasts between two sheets of plastic wrap. Use a meat mallet to pound them to about 1/2 inch thick.
  • Lay a slice of cheese and a piece of chicken breast fillet on each chicken breast. Season with salt and pepper, then roll the chicken tightly and secure with toothpicks.

Breading

  • Set up a breading station with flour in one bowl, beaten eggs in another, and breadcrumbs in a third.
  • Dip each rolled chicken breast in flour, then in the egg mixture, and finally coat with breadcrumbs, pressing gently to adhere.

Cooking

  • Heat cooking oil in a large skillet over medium heat.
  • Carefully add the chicken rolls to the skillet and cook for about 4-5 minutes on each side until golden brown and cooked through.
  • Ensure they reach an internal temperature of 165°F with a meat thermometer.
  • Remove from the skillet and let them rest for a few minutes before slicing.

Serving

  • Serve hot, drizzled with your favorite dipping sauce, or alongside a fresh salad.

Notes

You can use different cheese varieties for added flavor. To prevent dry chicken, avoid overcooking. Store leftovers in an airtight container for 3-4 days.
